What do you need:

  • 4 large sweet potatoes, washed and perforated

  • 1 cup gorgonzola cheese crumbled

  • 2 tablespoons lemon juice

  • 1/2 teaspoon salt

  • 1/4 cup black pepper

  • 1 cup shredded spicy cheddar cheese, divided

  • 1 cup shredded part-skim mozzarella cheese, divided

  • 1/3 cup grated Parmesan cheese

  • 1/4 cup butter, cubed

  • 1 tablespoon chives, minced
